Bacon and Tofu BBQ Meatballs and Organic Paprika Russet Fries
Since I’d made a double batch last night, there were leftover tofu and bacon meatballs. For lunch today, I put the leftover meatballs on to simmer in a BBQ sauce. I had a partial bottle of Annie’s Organic Sweet & Spicy BBQ Sauce and a partial bottle of Organicville Tangy BBQ Sauce, to that I added a couple of big spoonfuls of Welch’s Concord Grape Jelly….mmmm sauce.
With the potatoes, I got to use my new mandolin - LOVE IT! Made fries with organic russet potatoes, fried them in bacon grease (saved from last night), and seasoned them with salt, cracked pepper, and a generous amount of paprika lemon and lime spice blend.
It was pretty tasty. :-) I’ll update later with the meatball recipe, going to try it again with a couple of tweaks…”Marcy’s Test Kitchen” ;-)
